carbon vs stainless

Bill at what point did Hubertus (0r any others) use Carbon Steel blades vs Stainless Steel? Thanks Rick

Hubertus had an 11CM carbon blade option up until recently.
As far as them generally switching from carbon to stainless, I don't know.
Except for the aforementioned 11CM knife, I don't recall any others in carbon steel.
