what about something like this

I go simply by "that's expensive it must be good". I hate to rely on just that, the cheapy appears to be CS so it should hold a nice edge just needs a little cleaning. I've just been itching for a decent Kitchen knife and I'm always looking for a deal. Should I just buy a decent 150 dollar knife or would this cheapy suit me well? Thanks

Thanks, I have seen those and have thought about buying them. They just don't have a "chef style" knife, but I may pick up their butcher knife though, Thanks for the links.

You can also "keep your eyes open" at flea markets/yard sales there are some great bargains to be found

As a knife collector it seems strange for me not having a nice kitchen knife.
However I have done some homework on culinary knives and as Vagrant mentioned the Old Hickory knives are just flat-out the best for the dollar there is.
But if you don't mind spending a little cash for a nice knife then I highly recommend the Japanese knives.
You can spend 40 to 4000 on one but I figured I would spend in the 80 to 120 range and found this jewel to be a great buy. It says "Sushi" but it basically a 9" "slicer" and would do just about any job in the kitchen.
I make a brisket and that's a big piece of meat so this knife is what my sights are on right now.
You only need two kitchen knives,a big'in and a littl'in.
