Hey, Two Oxen a friend has one of those carving knives from the fully forged ones. Man that thing craves like a dream. I know kitchen knives aren't as exciting as a switchblade, but some of your knives are pretty good!

How would anybody do a consensus of what knives are in use in professional kitchens, anyway? I'm lucky if I can get in the front door, nevermind making a jerk outta myself busting into a kitchen...
