Wanna be blade maker

Hi guys I am a leather worker and I love a sharp blade
I am attempting to make a couple of blades to use in my tool kit
Both are being shaped using vintage Stanley wood plane blades
One is a round knife, it it used to cut long straight lines
And curves
The other is a skiver, used to shave edges down so it is easier to sew

What is the angle I need to make these blades?

Are both blades going to be beveled on both sides, or only one side?

On one side, I guess, I am not a blade maker
The one for skiving lays at a slight angle and shaves the edge off. At a 45 or less degree
