I think my favorite one is the GK Bonecutter. Perfect size and shape for me and the very best edge of any I own. I have had to do a lot of work on most of my HI ones to get them shaving sharp, but the GK one is perfect, even the tip will shave. I'm working on getting my M43 razor sharp now. The tip and end seem to be a challenge. Always so much nicer when you just have to maintain the sharp edge rather than establish it.
